Sensory Notes: This complex cool-climate wine is seductive and alluring with aromas of dark fruit, candied plum and forest air. On the palate, black cherry flavors mingle with notes of brambly berry and forest floor, all supported by robust tannins and a bright, natural acidity that adds poise and focus to the long, refreshing finish.
Winemaker Notes: Our Three Perch fruit is comprised of three renowned clones: Calera, 777 and Pommard, grown at an elevation of approximately 900 feet and dry-farmed—a unique approach that adds nuance and complexity to the grapes. The fruit was harvested by hand at night and cold soaked for 5 to 7 days, with one pump-over a day. The three clones were co-fermented using native yeast as 95% destemmed grapes, and 5% whole clusters. Once fermentation began, we switched to two punch-downs daily. The wine was aged for 11 months in 100% French oak barrels, 40% of which were new.
